Healthy Oven-Baked Potatoes with Chicken

A healthy and delicious dish combining skinless chicken with potatoes, fresh vegetables, and natural spices like turmeric and ginger. Cooked in the oven with light broth for a balanced, low-fat, flavorful meal perfect for the whole family.


2 large onions, sliced into rings

1 tsp Imtenan garlic powder

4 chicken thighs

1 tbsp Imtenan turmeric

1 tbsp Imtenan ginger

4 cups boiling water or low-fat broth

1/2 tsp Imtenan lemon black pepper

4 tsp Imtenan coconut oil

Imtenan Himalayan salt

2 large potatoes, sliced into rings

Steps


Remove the chicken skin and season with salt, pepper, turmeric, and ginger. Refrigerate for at least 30 minutes.

Heat coconut oil in a deep pan or pot, then sear the chicken until golden brown.

Mix the potato slices with the onion slices.

Arrange half of the mixture in a baking tray, add the chicken pieces, then cover with the remaining mixture.

Mix the boiling water or broth with the spices (ginger, turmeric, salt, and lemon black pepper), then pour over the tray to distribute the flavors evenly.

Cook on the stovetop until the liquid reduces, then transfer to the oven and turn on the top grill until golden with a rich yellow sauce.
