Whisk the eggs with vanilla, brown sugar, milk, and honey until the mixture is smooth.
Add cinnamon, oat flour, almond flour, coconut, and flax seeds and mix until all ingredients are combined and the batter is slightly thick.
Heat a non-stick pan over medium heat and lightly grease it with coconut oil.
Pour a portion of the batter into the pan, spread it in a thin circular layer, and cook until lightly browned on both sides.
Repeat the process to make the desired number of crepes.
To assemble the layers: place a crepe, add the diced apple and honey, then a second crepe, add more sauce or honey as desired, and continue until all layers are done.
