1 cup pasta
4 tbsp sweet corn
8 mixed color bell peppers
400 g tomato sauce (marinara)
1 cup chickpeas
8 tbsp sliced onion
1 tbsp minced garlic
1 cup brown rice
2 red chili peppers (optional)
1/2 tsp cumin
1 tsp thyme
1 tsp lemon black pepper

Steps
A creative twist on koshari that combines rice, pasta, and chickpeas with a rich tomato sauce and flavorful spices, enhanced with sweet corn and colorful peppers for a vibrant taste, with an optional spicy kick.
Soak the rice for 4–6 hours, then cook until tender. Boil the pasta and chickpeas separately.
Slice the peppers into thin strips, then sauté them in a pan with onion and garlic.
Add the tomato sauce and spices, then mix well.
In a serving bowl, combine rice, pasta, and chickpeas.
Top with the sauce and sweet corn.
Garnish with tortilla bread or Doritos and chopped parsley.
For a spicy flavor, add ground chili with olive oil on top.
